Smoked,Hickory,both equally vile,but back and streaky both bring a smile.
Do'es anyone know the recipe for that auld Dublin dish,the Rashers Tierney?

Very difficult to get people to cook rashers crispy.
If you like crispy bacon, you cannot eat bacon in public, because you either need to make a scene (inevitably send whatever you orders back) or, lump whatever not crispy bacon they've just handed you.

Smoked streaky, grilled slowly and eaten with egg and toast.

I've bought turf-smoked streaky rashers but while they taste great, they stink up the fridge so that it smells like a fireplace.
