Poached eggs call for a Bap or toast or some sort of carb, for the yolk to soak into.
If I were trying to turn the salmon and spinach concoction into something with poached eggs, but not use a carb of some description, I'd poach the eggs, and then toss one of them through the spinach with a dash of balsamic vinegar and oil:
the soft yolk, vinegar and oil would make a sort of deconstructed rustic mayonnaise type dressing for the leaves and the heat from the egg would wilt them only slightly. I'd then add the salmon/trout to the mixture, and put the other poached egg on top!
Like a warm breakfast salad.
